In Mexico City's San Rafael neighborhood, a small taco stand has made culinary history. El Califa de León, a 10-foot by 10-foot establishment, has become the first Mexican taco stand to earn a Michelin star. Chef Arturo Rivera Martínez, the chef behind this success, focuses on the grill where the heat transforms raw meat into delectable tacos.
Operating since 1968, this humble taco stand has maintained its authenticity and simplicity, becoming a culinary landmark. The tiny kitchen is dominated by a steel grill heated to an impressive 680 degrees Fahrenheit.

Chef Rivera Martínez process is straightforward: thinly sliced beef, a sprinkle of salt, a drizzle of lime juice, and a freshly rolled tortilla. Each taco is handed to customers on a plastic plate, ready to be topped with their choice of red or green sauce.

El Califa de León offers a menu of just four items, each derived from a cow’s rib, loin, or fore shank. Despite the minimalistic approach, the quality of the meat and the precision in preparation have earned it a Michelin star, making it the first Mexican taco stand to achieve such an honor. Patrons, often standing shoulder-to-shoulder with street vendors, savor the tacos amidst the bustling street scene.
The Michelin Guide praised the simplicity and quality of El Califa de León’s offerings, noting the exceptional taste of the Gaonera taco. This accolade places the taco stand among the elite in Mexico’s culinary landscape, highlighting the enduring appeal of tradition and quality.
In a city where street food is cherished, El Califa de León stands as a testament to the power of simplicity and dedication. Its Michelin star not only honors the craftsmanship of Rivera Martínez but also celebrates the rich flavors and cultural significance of Mexican street food.

President Biden recently unveiled a groundbreaking plan to protect undocumented spouses and children of U.S. citizens from deportation. This executive action, celebrated as the most significant immigration move since the DACA program of 2012, is a major victory for the Latino community and immigrant advocates.
Biden’s new policy provides a clear pathway for around 500,000 immigrants, who have been in the U.S. for at least 10 years, to apply for permanent residency without having to leave the country. This initiative also includes provisions for granting work permits and streamlined processes for DACA recipients with higher education degrees to obtain work visas more efficiently.
This initiative highlights Biden’s commitment to keeping families together and offering long-term immigrants the stability they deserve. By focusing on individuals who have been contributing to the U.S. economy and society for decades, this policy underscores the importance of recognizing and supporting the integral role immigrants play in our nation.
Latino leaders and immigration advocates have lauded this move, emphasizing its potential to foster a more inclusive and equitable society. The new policy not only strengthens the social fabric of the U.S. but also ensures that Latino immigrants can continue to thrive and contribute to the country’s economic growth.
As we celebrate this significant step, it’s clear that Biden’s plan is a vital part of creating a future where all members of our community have the opportunity to succeed and prosper. This policy marks a positive shift towards a more inclusive America, affirming the importance of diversity and unity in building a stronger nation.
